Easy Pork Fried Rice - Smart Points Value of 7
This easy weeknight dinner is sure to satisfy any take-out cravings you may have.
trimmed of all fat and cubed
brown or white
pkg Mixed vegetables
Pepper to taste
Cook rice according to package directions.
Heat a olive oil in a wok or large skillet. Add pork loin and brown until just done (about 5 minutes).
Add in the whole package of frozen mixed vegetables and saute for another 2 minutes.
Add in all of the rice to the wok and mix to combine.
Add your soy sauce and toss to combine, cook for an additional 2 to 4 minutes depending on if you want your rice browned or not. Season with pepper.
Makes 8 - 1 cup servings.
