  • 10 Eggs
  • 1 Red bell pepper diced
  • ½ Onion any variety, diced
  • 1 cup Sharp Cheddar Cheese shredded
  • Salt to taste
  • Pepper to taste


  1. Preheat oven to 375 degrees and coat lightly a 7 x 11 baking dish with cooking spray.
  2. Crack and whisk the eggs in a medium bowl.
  3. Add your bell pepper, onion, and cheese.
  4. Season with salt and pepper to taste.
  5. Transfer egg mixture to your prepared baking dish and bake for 25 to 30 minutes or until the center of the casserole is set.
