This recipe is great for vegetarians, or if you just want to cut out meat for a day.  It is a casserole that is super comforting and filling.  If you follow the recipe it has a Smart Points Value of 8 for a sizeable portion.  If you substitute jarred pasta sauce, it will increase the points value.

  • 1 box of Ziti
  • 1 Tbsp Olive Oil extra virgin
  • 1 Onion chopped
  • 2 Garlic cloves chopped
  • 1 large Can of crushed tomatoes
  • 1 Tbsp Italian seasoning
  • 2 cups Mozzarella cheese shredded, part skim
  • Salt to taste
  • Pepper to taste
  1. Preheat oven to 375 degrees and lightly coat a large baking dish with cooking spray.
  2. Boil ziti per box instructions.
  3. In a large saucepan, heat olive oil. Add the onions and garlic and cook until soft.
  4. Add the can of crushed tomatoes to the onion and garlic. Season with the Italian seasoning, and salt and pepper to taste. Cook until pasta is done.
  5. Combine pasta and sauce.
  6. Pour half of the pasta mixture into the prepared baking dish and top with half of the mozzarella. Pour the remaining pasta mixture on top and top with the rest of the mozzarella. Bake covered for 25 minutes.
