- 1 lb Pork Loin trimmed of all fat and cubed
- 1 ½ cups Rice brown or white
- 1 pkg Mixed vegetables frozen
- ½ cup Soy Sauce low sodium
- 1 Tbsp Olive oil
- Pepper to taste

Cook rice according to package directions.

Heat a olive oil in a wok or large skillet. Add pork loin and brown until just done (about 5 minutes).

Add in the whole package of frozen mixed vegetables and saute for another 2 minutes.

Add in all of the rice to the wok and mix to combine.

Add your soy sauce and toss to combine, cook for an additional 2 to 4 minutes depending on if you want your rice browned or not. Season with pepper.
